Here in New Orleans, the city prides itself on not only being a Southern city, but the Northern-most city in the Caribbean. That is why Compère Lapin's julep variation has a touch of those sea-touched shores that give New Orleans' culture color and brightness, also seen in the food.

The CL Julep at Compère Lapin mixes spicy bourbon with rich rum, cane sugar, and a sprinkling of salt and bitters on top to make that mint pop.

CL Julep

1 oz bourbon

1 oz St Lucian Rum

3/4 cane syrup

5-8 mint leaves

2-3 big sprigs of mint

Pinch of sea salt

2-3 dashes of Peychaud Bitters

Gently press mint leaves and cane syrup in the bottom of a julep cup. Add bourbon, rum, and swizzle. Add more crushed ice, making a mound of ice and garnish with salt, bitters, and mint sprigs, sticking a paper straw in the mint so that one must nuzzle the mint to take a sip.
