The inspiration for this cocktail came from the love of Atlas' home state of Georgia, which is known for peaches. Wanting to create a version of a julep that had complexity and balance while still being light and refreshing, Atlas uses a more modern method (vacuum sealing) the freshness of the peach flavor instead of steeping the fruit with the bourbon. By infusing the bourbon with peaches, there is a more consistent fruit flavor from first sip to last - perfect for a warm Georgia afternoon.

Atlas' Peach Julep

2 oz peach-infused bourbon

3/4 oz peach syrup

1/4 oz lemon juice

2 dashes of peach bitters

Mint leaves

Peach slices for garnish

Muddle mint leaves and peach syrup in a cocktail shaker; add bourbon, lemon, and ice. Shake well, then double strain into a julep cup that has been packed with crushed ice. Garnish with peach slices and fresh mint.

Peach Syrup Recipe

In a small saucepan, place one cup of water, one cup of granulated sugar, and one peach thinly sliced. Bring to a boil over medium heat, reduce heart to low and simmer for 30 minutes. Strain, first through a wider mesh such as a china cap, pressing peaches to extract all juice, then double strain through fine mesh.

To infuse bourbon with peach, estimate one ripe peach per cup of bourbon. Slice peaches and cover bourbon in a vacuum seal bag, and let sit one day.
